Hello weekend. Hello, Mojitos.

The mojito was the favourite drink of author Ernest Hemingway, and we’re pretty partial, too. Behold, our tried and tested recipe for this addictive Cuban classic from My Little Cocktail Book, a favourite at RC HQ. It’ll inspire you to get your shaker out. And after two or three of these babies, we predict you’ll be shaking what your mama gave you.

You’ll need: 8 mint leaves, half a lime, chopped, 15ml (1/2 oz) sugar syrup*, ice cubes, 60ml (2 oz) white rum, soda water. *You can buy sugar syrup ready-made or make it yourself by bringing equal quantities of sugar and water to the boil, reducing the heat and simmer until reduced by half. Then allow to cool before using.

What to do: Muddle the mint and lime with the sugar syrup in a cocktail shaker. Add a scoop of ice, then the rum. Shake vigorously and strain into a chilled tumbler 2.5cm (1 inch) from the top, then top up with the soda water. Drink mojito. Repeat. Enjoy.
