WHO WON the 5 x Jamie Oliver prize packs?

I am just a teensy bit obsessed with Jamie Oliver. I know he can be annoying, with the bish-bosh-bash and the ‘say hello to my friend Mr Garlic’ and so on. But he’s got buckets of charm. He teaches kids how to identify essential vegetables, like potatoes. And for god’s sake, can the man cook.
But even if you missed Jamie and his super speedy meals on the box, there’s no need to sob into your wok. Because to celebrate the release of 15 Minute Meals Volume 2 on DVD, the lovely guys at Shock are giving RC readers the chance to win one of five double packs of Jamie Oliver DVDs, each with Jamie Oliver 15 Minute Meals Volume 1 and Jamie Oliver 30 Minute Meals Volume 1. I don’t need to tell the cooks among you that this is a pretty all-round wicked prize. The kind of TV cooking marathon that would wipe the smile right off my husband’s face (if he didn’t get to eat something good at the same time).

    Take a chicken minute steak salt and pepper one side sprinkle with some herbs, add grated cheese cover with pancetta and squish to stick them together. Fry chicken pancetta side up, then flip and cook the other side add a knob of butter add some asparagus to the pan and hey presto a delicious quick dinner! A bit of the cheese will ooze out and meld with the butter making a yummy sauce πŸ™‚ I’m hungry just thinking about it!

    I make an awesome Vegetable fried rice:

    3 tablespoons soy sauce
    1 teaspoon sugar
    1/4 cup vegetable oil
    3 large eggs, lightly beaten
    3 cloves garlic, minced
    2 teaspoons minced, peeled fresh ginger
    5 cups cold cooked rice
    1/2 teaspoon salt
    4 chopped scallions
    3 cups of chopped mixed fresh vegetables
    2 teaspoons sesame oil

    Yummo!

    Take a chicken breast, smash it out as thin as you can, coat with salt pepper and lemon zest. Place in frypan and cook. Take some packet lettuce leaves and coat with salt, pepper and the juice from the lemon. Cut up tomato, onion and place in a bowl, add olive oil salt and pepper and mix, squeezing the tomatoes and onions together lightly. An amazing 15 minute meal which takes minutes to make!

    15 minute recipe- packet of sweet chilli marinated tofu, brown rice and as many veges as can be found in the house stirfried with cashews, ginger and oyster sauce.

    Boil some pasta
    Fry a chopped onion in splash of olive oil, add chopped capsicum and few cloves of garlic
    Half way through pasta cooking time add small pieces of broccoli
    Add jar of pasta sauce to onion mix, drain pasta mix when cooked
    add to the pasta sauce stir ti mix
    Serve with grated cheese on the side

    A simple pomodoro pasta, but with a twist. I sautΓ© about 8 tomatoes with a red capsicum in olive oil and garlic and add it to pasta, so simple!

    I make up a large salad. Then fry some finely chopped mushrooms, shallots, and add beaten eggs (two per person) and freshly chopped herbs. Makes a tasty scrambled eggs served with salad and toast. Great for a quick lunch.

    Pesto and bean salad

    2 tbs pesto
    1 can of canneloni beans
    1 cup of qinoa (cooked)
    a couple of sprigs of fresh parsley
    2 spring onions diced

    Green Eggs, packed with cheddar cheese, spinach and artichoke hearts. It’s one of those breakfasts that makes you feel like you could tackle the world head-on that day. A punch of protein and a zap of calcium all in 15 minutes. No chopping, no measuring, just a little mixing and cooking and you are done. It’s also a breakfast that can been eaten at any time of the day. Breakfast for dinner and in 15 minutes. I’m there.

    I love hash browns –
    Grate a few potatoes in the food processor, and an egg and some chopped ham and then fry in patties.

    Quick and easy – and goes down a treat with some aoili if you are feeling a bit shmancy.

    Asparagus, Bacon & Parmesan Pasta

    500g pasta
    500g asparagus, chopped coarsley
    2 teaspoons olive oil
    5 bacon rashers, sliced thinly
    1 clove garlic, crushed
    100g butter, chopped
    1/4 cup coarsely chopped flat leaf parsley
    1/2 cup (40g) grated parmesan cheese
    1/2 cup (40g) grated mozzarella cheese
    salt & pepper

    Cook pasta in large pan of salted boiling water. Throw in the asparagus in three minutes before the pasta is cooked. Drain and return to pan.

    Heat the oil in a large frying pan; add the bacon and cook, stirring until crisp.
    Add the garlic and cook until fragrant.

    Add the bacon mixture to the drained pasta and asparagus with the butter, parsley
    and a quarter of the combined cheeses, toss gently. Season to taste.

    Preheat the grill to hot. Transfer the pasta to a shallow 2.5 litre ovenproof
    dish. Sprinkle the top of the pasta with the remaining cheese, grill until browned
    lightly.

    Serves 4 – 6

    I love these Asian style chicken burgers!

    500g chicken tenderloins
    1 TBSP kecap manis
    Burger buns or thickly sliced bread
    75g snow pea sprouts
    1 Lebanese cucumber sliced thinly lengthways
    1/4 cup crunchy peanut butter
    1 TBSP sweet chilli sauce
    2 TBSP coconut milk

    Combine chicken and kecap manis in bowl and cook on grill plate or bbq until browned and cooked through.

    Combine the peanut butter, chilli sauce and coconut milk to make a sauce.

    Toast buns or bread and layer sprouts, chicken, sauce and cucumber.

    Enjoy! These are soooo good!

    Chickpea and carrot couscous with mint yoghurt
    β€’ 3 carrots, chopped
    β€’ 2 cups (400g) couscous
    β€’ 400g canned chickpeas, rinsed, drained
    β€’ 2 tbs lemon juice
    β€’ 1 tbs olive oil
    β€’ Mint leaves, to garnish
    Mint yoghurt
    β€’ 1/2 cup low-fat Greek-style yoghurt
    β€’ 1 tbs lemon juice
    β€’ 2 tbs roughly chopped mint leaves
    β€’
    β€’ For the yoghurt, mix all ingredients in a small bowl and set aside.

    β€’ Steam carrots, covered, over boiling water for 3-5 minutes until just tender.
    β€’ Meanwhile, place couscous in a heatproof bowl and pour over 1 1/2 cups (375ml) of boiling water. Cover and stand for 5 minutes. Uncover, fluff with a fork, then add chickpeas and carrots.
    β€’ For the dressing, whisk sumac, lemon juice and olive oil in a bowl.
    β€’ Add to the couscous and toss together.
    β€’ Serve the chickpea and carrot couscous with the minted yoghurt.

    Jamie would totally be proud of this one: Risoni salad. Cook risoni, meanwhile blend together a handful of fresh basil leaves and 1/3 cup of sun dried tomatoes in olive oil and half a cup grated parmesan cheese. Drain and rinse the pasta then mix it all together then add a bit more olive oil to make it less sticky. Tastes amazing!

    Not sure if this is exotic enough… but it’s our regular lazy Sunday night dinner. Eggs on Toast. Boring does it sound? (said in my best Yoga voice). NO!

    Layer it this way:
    Toast
    Home-made Hollandaise sauce OR Ginger Aoli – whatever takes your fancy this particular Sunday night.
    Shaved Double Smoked Ham
    Thinly sliced cheese – what schmancy cheese you have in the fridge (otherwise “tasty” is fine)
    Thinly sliced tomato
    Thinly sliced red onion
    Poached Egg

    Husband takes 2, 6yr old son & myself find 1 is heaps! Works well with any leftover (ha ha!!) white wine you have – just for the big kids of course.

    My 15 minute recipe is chilli garlic prawns. Can be served on rice or a salad. Delicious, healthy and quick. What more can one want.

    2 tbs olive oil
    80g butter
    4 garlic cloves, crushed
    2 long fresh red chillies, finely chopped
    1kg peeled green prawns
    2 tbs fresh lemon juice
    3 tsp grated lemon rind
    1/4 cup chopped fresh coriander

    If you want it to be creamy chilli garlic prawns just add 150ml of cooking cream and serve on rice instead of salad πŸ™‚ YUM!

    Chicken Tacos with homemade Salsa

    Salsa:
    1 green capsicum, diced
    1 red onion, diced
    1 to 1/2 tablespoon diced jalepenos (according to taste – omit for children or use very little; I make two batches – one spicy and one not!)
    1/2 teaspoon ground or freshly diced coriander
    Juice from one lime
    1 can crushed tomatoes and juice
    Salt and Pepper to taste

    Combine all ingredients together and season to taste.

    Taco Filling:
    1 roast chicken from the supermarket, meat removed and diced
    1/2 Lettuce – shredded
    1 cup grated cheese
    Packet taco shells

    Heat shells in oven wrapped in foil or in microwave as directed on packet.
    Place cheese, diced chicken and shredded lettuce in taco shells and top with homemade salsa.

    Enjoy!

    Then make chicken stock from the bones – and use for tomorrow nights dinner!

    15 Minute Recipe: Baked Muschroom Parma.
    2 x Large Field Mushrooms
    2 x Small rashers bacon
    Quarter Cup Bolognaise Sauce
    Grated Cheese
    Fresh Basil
    1 X Sheet Puff Pastry
    Olive Oil

    Preheat oven 220 degrees.
    Trim then lightly fry Field Mushrooms both sides until wilted on high heat in frying pan.
    Lay your Pastry onto a heavy bottom baking dish (heavy bottom helps heat transfer for crispier pastry). Layer your Parama in the middle of the sheet with bacon on bottom, Mushroom then some of the sauce and basil, (sauce helps cheese stick) then repeat.

    Roll the corners and edges towards the Parma to form a small wall around it. This will ensure all the juices are caught and looks pretty when cooked, you can crimp the sides like a Pastie if desired.
    Brush with egg if desired or lighty drizzle Olive oil.

    Bake for 10 – 12 minutes

    Enjoy Hot!

    15 minute pot pies!

    Shredded BBQ chook
    Chopped mushrooms
    Crumbled feta

    Shovel it into pie pots, top with a square of frozen puff pastry – 20 mins on 200 degrees and BAM

    Inspired by Jamie –

    Home made Apple Pie
    Store bought puffed pastry
    Tin of apples
    Brown sugar

    Roll out the puff pastry & line your pie dish
    Mix the tin off apples & brown sugar to taste
    Put into pie dish & line top of pie with pastry then brush with milk
    Cook in oven at 180’C till golden brown

    Serve with whipped cream or icecream

    My quick and foolproof recipe is Sundried Tomato and Chickpea Salad. It never fails to impress and there’s no cooking required! Firstly, place the following ingredients in a blender and blend until smooth:

    – Approx 12 semi-dried tomatoes
    – 2 tsp dijon mustard
    – 1/2 a lemon

    Stir this mixture through 1 tin of chickpeas. Serve with lettuce, sliced tomato, capsicum, grated carrot, and any other salad ingredients you have in the fridge! Serves 2 as a main meal.

    Competition entry: my favourite 15 minute recipe…
    Cajun Scallops

    1 teaspoon olive oil
    1 large red onion, thinly sliced and separated into rings
    1 teaspoon Cajun seasoning
    1/2 teaspoon ground black pepper
    1 teaspoon butter
    1 garlic clove
    3/4 pound fresh scallops
    1 to 2 teaspoons hot and spicy sauce

    Heat oil in a cast-iron skillet over high heat. Add onion, Cajun seasoning, and pepper; sautΓ© 3 minutes. Add butter and garlic; sautΓ© 30 seconds. Add scallops; cook 1 minute or until browned. Sprinkle with hot sauce; turn. Cook 3 minutes or until done.

    Oh yes, please, please, please! Love Jamie and after catching a little of the show I’d LOVE to win this one. Great prize pack RC!

    Funnily, I think one of my favourite quick standbys was inspired by a Jamie recipe but I can’t remember for sure now.

    This is for one…

    Preheat a roasting tray in the oven at 220 degrees

    In a bowl, mix cherry tomatoes, black olives, blanched green beans and basil leaves and dress with olive oil and a pinch of salt and lots of black pepper

    Get a fillet of salmon and squeeze over the juice of half a lemon, rub with olive oil and season. Chuck the lemon in with the veggies

    Into your now hot roasting pan place the salmon fillet on one side skin side down, toss the veggies into the other and lay a few fillets of anchovies over them

    Bake for 10-15 minutes

    Delish! Healthy! Easy! Quick! What more can one want in a weeknight meal? You can add couscous or similar to bulk it out but this is lovely on its own.

    I can make a deliciously moist roast in less than 15 minutes with my pressure cooker! All you have to do is seal the meat with a little olive oil, add some peeled veggies, add some seasoning and two cups of water (or even some wine!) , close the lid and in 12 minutes it’s ready! No joke! Pressure cookers are the best invention ever and very energy efficient!

    If I have 15 minutes for dinner I skip right to dessert! Quick and easy self saucing chocolate puddings in small ramekins.
    SR Flour, cocoa, brown sugar, butter, milk an egg bam bam bam in the oven for 10 minutes and dinner is served πŸ™‚

    VEGETARIAN NACHOS!! Spread corn chips on plate. Sprinkle drained 3-bean mix over, add salsa and grated cheese and microwave for 2 to 3 minutes until cheese melts. Top with sour cream and avocado slices…and serve to lucky family!!

    Pasta with roasted capsicum sauce. In a blender, blend a jar of roasted red capsicum (I usually make my own and freeze), chilli (optional) and fried garlic and onion. After whizzing them up place in a frypan with fresh basil, salt, pepper and a little cream. Add cooked pasta. Yum.

    I love making Mexican Noodles with mince, onion, taco seasoning, 2 packets of 2 minute noodles, capsicum, salsa and tomatoes and sour cream on top.

    Now the kids are a bit older we add more noodles and some kidney beans to add more substance, and they still love it.

    My 15 minute fried rice is absolutely to die for. Shredded BBQ chook, bacon pieces,cooked and peeled prawns, packet of stir fry veggie mix,baby chop sum, onion dash of oyster and soy sauce, and 2 packets of microwaveable rice. Mix all together and yummo! And quick and tasty dinner the family will love

        Absolutely Rachel, the recipe wanted chicken fillets but if you’re after a quick and easy meal the good old BBQ chook does the trick πŸ™‚ would love to look at your chicken and leek pie recipe, that’s sounds yummo!!

          Easy peasy. πŸ™‚

          1. Pull all the meat off a BBQ chook and roughly chop into bite-sized pieces. Careful of hidden bones, I have been caught before!
          2. Chop 1 x leek into small pieces, fry in a big frypan with butter or oil until soft.
          3. Add a couple of spoons of flour to leeks, stir until coated. Add chicken to pan. Stir together. Should be quite dry.
          4. Add a cup of hot chicken stock a little at a time, stir (you don’t want it too runny tho so just see how you go!)
          5. Add a cup (again just gauge it) of either single cream or evaporated milk (if you want a lighter low fat option), stir. You should have a lovely chunky creamy filling for your pies.
          6. Spoon mixture into medium ramekins or oven-proof bowls or one big pie dish, depending on what you have. I love making individual pies and they look gorgeous when they come out.
          7. Cut piece of defrosted puff pastry to cover edges of dish, press down around edges with back of fork (looks pretty!) and slice a cross in the top of pastry. Baste with beaten egg.
          8. Cook pies in a medium oven (about 180 degrees) for 20-30 mins or until pastry is puffed up and golden brown. Serve!

          Yum, so hungry for chicken and leek pie now!! πŸ™‚

    Chargrilled Thai Spiced Chicken Thighs with Chargrilled Red Capsicum, Zucchini, Mushrooms, and Sweet Potato…..
    Step One :- Make Thai Marinade
    2 crushed cloves garlic, 2 tablespoons each of ketcup manis (sweet soy), and soy sauce, 1 tablespoon sweet chili sauce, 2 tables spoons chooped corriander, 1 tablespoon Thai seasoning (mcormicks), 1 tablespoon seasame oil.. mix it all up and pour over chicken thighs.. set aside
    Step two :- Slice all vegs into long slices (size of palm maybe)
    Step 3 :- Take it outside to BBQ
    cook away
    Its so easy, takes no time at all and is really good for you, and looks great on the plate when you layer it all up in a stack.

    My Mexican fajitas are amazing and quick. I fry some beef pieces, capsicum and onion. I crack open an avocado and a jar of salsa. Chop lettuce. Pop flour tortillas in the oven to warm. Serve all that on the table for everyone to create their own roll of deliciousness. Also works with chicken, pork, or even eggs for a quicker, vegetarian option.

      Hey Lisa, I do these but with chicken and I add cumin, oregano (fresh), hot paprika and some lime zest or lime juice to the marinade or to the pan before cooking. Takes it to a whole new level! πŸ™‚

    It would have to be a wok cook. Sizlling hot and cooking fast. Thai spice prawn vegetable dish. I love getting lots of thai flavours chilli, spring onions, thin carrot, beans, lime and nuts etc getting lots of heat in wok and chucking king prawns or smaller prawns whole after taking the track out. Leave whole and cook til 15 mins is up.

    Satay Beef Stir Fry with Asian vegetables. Run the noodles under hot water, separating with your fingers and set aside. Brown your beef strips in a hot wok, set aside. Stir fry a packet of Asian vegetables, add a jar of Satay sauce. Chuck in the beef strips, noodles, stir while it all heats through and plate up. Fast, delicious and extremely easy for a week night dinner!

    I quickly cook up some angel hair or small pasta. In a large frypan I cook thinly sliced chicken, bacon, onion and garlic. When cooked add some fresh sliced red chilli and a generous splash of white wine. When wine has reduced add some chopped fresh tomatoes and a pinch of sugar. One minute before serving, add baby spinach, fresh basil and chopped avocado ( and a dash of cream if you are feeling naughty). Combine with pasta and enjoy with a BIG glass of McLaren Vale shiraz πŸ™‚

    Vegetarian pizza- place pizza tomato base o bought pizza base, shred a handful of basil leaves, place on pizza, half pieces of boccochini cheese all over, and cook – simple and very tasty

      Isn’t homemade pizza the best meal ever Margaret? I do mine on baby pita breads – always the same, tomato sauce (homemade), thinly sliced onion, thinly sliced green capsicum, 1 super hot green or red chilli, strips of sliced ham and a bit of cheddar. To die for….

    Mine is a delicious pasta dish of chorizo, garlic, broccoli and onion cooked, then add cooked pasta and baby spinach leaves, blend a tin of peeled tomatoes with herbs, I use parsley and basil, add to pan as a sauce and heat through, serve topped with parmesan cheese so easy and yum.

    Scrambled eggs 4 eggs dash of milk salt and pepper then anything you may like to add Tabasco sauce her meat veges be creative add ingredients together and cook on a medium heat in a fry pan preferably by Jamie oliver

      Never added meat or veggies to my eggs, I’m a bit of a scrambled egg purist but I do like them with a bit of cheese (romano) and some chopped fresh rosemary – it’s amazing!

    Steak with mushroom sauce-use thin steaks,not to large anyway- cook in a pan-slice mushrooms- add to pan and sear- throw in some cream and heat through without boiling the cream. Serve with some vegies steamed in microwave and it’s a nice meal in 15 minutes!And the man loves it!

    I make Aussie style Vietnamese cold rolls. Grate a random salad vege, add some vermicelli, cold meat, mayo and cheese. Wrap it all up in a rice paper sheet and voila!

      Sounds yum! I have had a pack of rice paper sheets in my pantry for so long… I love making some with cooked prawns, vermicelli, a big handful of mint and coriander, grated carrot, chilli strips and a slurp of satay sauce…

    My failsafe recipe is my home made hamburgers
    with a compote of pestled fresh herbs from my garden mixed into mince with worstershire sauce ,tomato sauce ,seasoning, finely chopped onion and an egg all turned into patties which grilled on the bbq
    with all the trimmings are fantastic

      I do love a burger but mine are thai chicken burgers… mince mixed with heaps of chopped thai herbs, breadcrumbs, chilli, a dash of sesame oil and a tbs of thai curry paste if I have it handy… amazing
